- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 1 cup shredded cheddar-jack cheese
- 4 large tortillas
- Butter (for cooking)
- Optional toppings: diced onions, cilantro, sour cream, jalapeƱos
Instructions
- Mix shredded chicken with BBQ sauce until fully coated.
- Heat a skillet over medium heat and add a little butter.
- Place one tortilla in the skillet and sprinkle half of the cheese over it.
- Spread the BBQ chicken mixture on top of the cheese, then sprinkle the remaining cheese.
- Place a second tortilla on top and cook until the bottom is golden brown.
- Carefully flip the quesadilla and cook until the other side is golden and the cheese is melted.
- Remove from the skillet and let it cool for a minute before cutting into wedges.
- Serve with your favorite toppings.
Notes
For added flavor, let the BBQ chicken mixture marinate for at least 30 minutes before using. Customize with your favorite toppings.
