- ¾ cup shredded chicken
- ¼ cup barbecue sauce
- 2 tablespoons butter
- 2 large flour tortillas
- ½ cup shredded mozzarella cheese (divided)
- ¼ red onion (thinly sliced)
Instructions
- Combine the chicken and barbecue sauce in a small bowl. Mix well and set aside.
- Melt butter in a large skillet over medium heat.
- Place one tortilla in the middle of the pan. Top with ¼ cup shredded cheese.
- Spread the chicken mixture evenly on top of the cheese, leaving a ½ inch border around the tortilla.
- Next, add sliced onion and the remaining cheese. Place the second tortilla on top and lightly press down.
- Heat the tortilla on both sides for about 3-4 minutes, or until golden brown and cheese is melted.
- Remove from the pan, cut into four slices, and serve immediately.
Notes
Serve with guacamole or salsa for added flavor.
