Instructions
- Mix the shredded chicken with BBQ sauce until well coated.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet, sprinkle half of the cheese on one half, add a portion of the BBQ chicken mixture, and top with more cheese.
- Fold the tortilla over and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from skillet, slice into wedges, and serve with optional toppings such as sliced green onions or cilantro.
