- 1/2 cup BBQ sauce (plus more for serving)
- 2 cups cooked white or brown rice
- Juice & zest of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- 1 cup corn kernels (fresh, frozen, or grilled)
- 1/2 cup diced tomato
- 1/4 cup red onion, finely diced
- 1 tbsp lime juice
- Salt & pepper, to taste
- 1 cup black beans, drained & rinsed
- 1/2 cup shredded cheddar cheese
Instructions
- Toss the shredded chicken with BBQ sauce until well-coated. Warm gently in a skillet or microwave, ensuring it’s hot and flavorful.
- Mix the cooked rice with lime juice, zest, cilantro, and salt in a bowl to infuse it with freshness and zest.
- Prepare corn salsa by mixing corn, tomato, onion, lime juice, salt, and pepper in another bowl. This adds a refreshing crunch to your dish.
- Layer a generous scoop of rice, followed by the BBQ chicken, black beans, corn salsa, and a sprinkle of cheddar cheese to finish off.
Notes
For ease, store BBQ sauce separately and mix into the chicken after reheating to maintain its moisture. You can also prep ingredients ahead of time and store components separately in airtight containers in the fridge.
