- 2 cups cooked chicken, shredded
- 1 cup barbecue sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 flour tortillas
- 1 tablespoon olive oil
- Optional: diced onions, bell peppers, or jalapeƱos
Instructions
- Mix the shredded chicken with the barbecue sauce until well coated.
- Heat a skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and sprinkle half with cheese.
- Add a portion of the barbecue chicken mixture and any optional toppings.
- Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes.
- Flip and cook the other side for an additional 2-3 minutes.
- Remove from the skillet, cut into wedges, and serve warm.
