Description

Delicious and cheesy quesadillas filled with smoky barbecue chicken, perfect for any occasion.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup barbecue sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Optional: diced onions, bell peppers, or jalapeƱos

Instructions

  1. Mix the shredded chicken with the barbecue sauce until well coated.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet and sprinkle half with cheese.
  4. Add a portion of the barbecue chicken mixture and any optional toppings.
  5. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes.
  6. Flip and cook the other side for an additional 2-3 minutes.
  7. Remove from the skillet, cut into wedges, and serve warm.
