Barbecue Chicken Quesadilla

Description

A delicious fusion of smoky barbecue chicken and melted cheese in a crispy tortilla, perfect for quick meals or gatherings.


Ingredients

  • 1 teaspoon olive oil
  • 2 tablespoons chopped red onion
  • 4 oz cooked boneless skinless chicken breast, finely chopped
  • 3 tablespoons barbecue sauce
  • 1 teaspoon chopped parsley
  • 2 lower cal/carb 8” flour tortillas
  • 2 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. Drizzle the olive oil into a skillet and bring over medium heat. Add the chopped red onion and stir to coat.
  2. Cook, stirring occasionally, for about 2 minutes until softened and browned. Add the finely chopped chicken and stir together.
  3. Cook for another minute or so until warmed through. Remove from heat.
  4. Add the barbecue sauce and chopped parsley to the chicken and onions and stir to coat.
  5. Build each quesadilla by placing a tortilla on a clean dry surface. Sprinkle a ½ ounce of the shredded cheese over half of the tortilla.
  6. Add half of the barbecue chicken mixture (about 1/3 cup) and spread it over the cheese.
  7. Sprinkle another ½ ounce of cheese over the top of the chicken and fold the tortilla over to form a quesadilla.
  8. Repeat with the remaining ingredients to make a second quesadilla.
  9. Mist both sides of the quesadillas with cooking spray. Place on a griddle pan or skillet.
  10. Cook for about 2-3 minutes until golden, then flip and cook for another 1-2 minutes until the cheese melts.
  11. Cut into triangles and serve.

Notes

For a spicy twist, add jalapeños or pepper jack cheese. Serve with guacamole for an extra flavor boost.
