Ingredients

- ¼ cup extra virgin olive oil
- Juice of 2 lemons (about 6 tbsp)
- Zest of 1 lemon
- 3 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tbsp apple cider vinegar
- 2 tbsp plain Greek yogurt
- ½ tsp crushed red pepper flakes
Instructions
- Gather all ingredients. Zest and juice the lemons, and finely mince the garlic.
- Combine lemon juice, zest, olive oil, apple vinegar, minced garlic, oregano, salt, and black pepper in a mixing bowl. Whisk until smooth.
- Place about 1.5–2 lbs of chicken in a sealed container and pour the marinade over it evenly. Seal and refrigerate for at least 120 minutes (ideally 240–360 minutes).
- Cook the marinated chicken using your preferred method, whether grilling or baking, until fully cooked through and juicy.
Notes
For optimal flavor, marinate the chicken for at least 4-6 hours. Let the chicken come to room temperature before cooking for best results.
