Description

Transform ordinary chicken into a succulent dish bursting with zesty goodness using this authentic Greek marinade.


Ingredients

Scale
  • ¼ cup extra virgin olive oil
  • Juice of 2 lemons (about 6 tbsp)
  • Zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp apple cider vinegar
  • 2 tbsp plain Greek yogurt
  • ½ tsp crushed red pepper flakes

Instructions

  1. Gather all ingredients. Zest and juice the lemons, and finely mince the garlic.
  2. Combine lemon juice, zest, olive oil, apple vinegar, minced garlic, oregano, salt, and black pepper in a mixing bowl. Whisk until smooth.
  3. Place about 1.5–2 lbs of chicken in a sealed container and pour the marinade over it evenly. Seal and refrigerate for at least 120 minutes (ideally 240–360 minutes).
  4. Cook the marinated chicken using your preferred method, whether grilling or baking, until fully cooked through and juicy.

Notes

For optimal flavor, marinate the chicken for at least 4-6 hours. Let the chicken come to room temperature before cooking for best results.
