Description

A refreshing twist on coleslaw featuring crunchy apples, savory scallions, and a creamy dressing, perfect for any occasion.


Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon poppy seeds
  • Salt and freshly ground black pepper to taste
  • 16 ounces coleslaw mix
  • 2 apples (peeled, cored, and julienned)
  • 4 scallions (thinly sliced)
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds

Instructions

  1. Whisk together mayonnaise, sour cream, apple cider vinegar, granulated sugar, honey, dried mustard, poppy seeds, and salt and pepper in a small bowl. Cover and chill.
  2. Add coleslaw mix, julienned apples, sliced scallions, dried cranberries, and sliced almonds to a large bowl.
  3. Drizzle the dressing over the salad and toss to combine.

Notes

For a vegan version, substitute the mayonnaise and sour cream with vegan alternatives. Add a pinch of cinnamon for extra flavor if desired.
