- 2 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic
- 2 tsp ground cumin
- 2 tsp ground oregano
- 1 tsp ground cinnamon
- 4 cups beef broth
- Salt and pepper to taste
- Corn tortillas
- Cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Toast the dried chiles in a skillet until fragrant, then soak them in hot water for 15 minutes.
- Blend the soaked chiles, onion, garlic, cumin, oregano, and cinnamon with a cup of broth until smooth.
- Season the beef chuck with salt and pepper.
- In a large pot, add the beef, blended sauce, and remaining broth.
- Simmer the mixture until the beef is tender, about 120-180 minutes. Check occasionally, adding water if needed.
- Once cooked, shred the beef with two forks and serve in warm corn tortillas, garnished with cilantro.
