Ingredients

  • 1½ cups granulated sugar

  • 1 cup unsalted butter, softened
  • 4 large eggs, room temperature
  • 2 tablespoons lemon zest (from 23 lemons)
  • ⅓ cup fresh lemon juice
  • 1 teaspoon vanilla extract

  • 23 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

1. Preheat your oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper and lightly grease it.

2. In a bowl, whisk together the flour and salt. Set aside.

3. In a large mixing bowl, cream the butter and granulated sugar using an electric mixer until light and fluffy (about 3-4 minutes).

4. Add the eggs one at a time, beating well after each addition.

5. Mix in the lemon zest, lemon juice, and vanilla extract until well combined.

6. Gently fold in the flour mixture just until combined. Don’t overmix — this keeps them fudgy!

7. Pour the batter into your prepared pan and spread evenly with a spatula.

8. Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.

9. Let the brownies cool completely in the pan on a wire rack.

10. While cooling, prepare the glaze: whisk together powdered sugar, lemon juice, and zest until smooth.

11. Once cooled, pour the glaze over the brownies and spread it evenly. Let it set for at least 30 minutes before slicing.

Notes

Bring your eggs and butter to room temperature for best texture.

Look for moist crumbs, not wet batter, to know they’re done.

Brownies can be made a day ahead and glazed before serving.
