Instructions

1. Heat a large pot over medium heat and add a drizzle of oil. Brown the beef stew meat on all sides to develop rich flavor.

2. Add the onion and garlic, sautéing until softened and fragrant. This builds the base flavor for the stew.

3. Stir in the tomato paste, thyme, and bay leaf, cooking for 1 minute to let the spices bloom.
