- 2 cups sliced mushrooms (such as cremini or button)
- 2 carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, diced

- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 cups vegetable broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 2 cups fresh spinach, chopped
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant (about 5 minutes).
- Stir in the sliced mushrooms, cooking until they are browned and have released their moisture (about 8 minutes).
- Toss in the diced carrots, celery, and red bell pepper. Cook for another 5 minutes, letting the vegetables soften slightly.
- Sprinkle the dried thyme, rosemary, smoked paprika, salt, and black pepper over the mixture, stirring to combine.
- Pour in the vegetable broth and add the drained white beans, stirring everything together. Bring to a gentle boil.
- Reduce the heat to low and let it simmer uncovered for about 25-30 minutes, until vegetables are tender.
- Stir in the chopped spinach and continue cooking for an additional 5 minutes until the spinach wilts.
- Remove from heat and stir in the lemon juice. Adjust seasoning if necessary.
- Ladle the stew into bowls and garnish with fresh parsley.
Notes
For a thicker stew, blend a portion of the beans and return them to the pot for a creamier texture. This dish is also great for meal prep and can be made ahead of time.
