- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup green beans, trimmed and chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground turkey over medium heat until browned. Drain any excess fat.
- Add the chopped onion, carrots, and celery to the pot. Sauté until the vegetables are tender.
- Toss in the minced garlic and stir for about one minute until fragrant.
- Pour in the vegetable broth, followed by the diced tomatoes and green beans. Season with thyme, salt, and pepper, and bring the soup to a boil.
- Reduce the heat and let it simmer for 20-30 minutes.
- Serve hot and enjoy.
