- 1 pound ground beef
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag Fritos
- 1 cup diced bell pepper
- 1 cup diced onion
- Sour cream and salsa for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Stir in the black beans, corn, taco seasoning, diced tomatoes, bell pepper, and onion. Cook for 5-7 minutes until everything is heated through.
- Layer the mixture in a greased baking dish: start with half of the beef mixture, followed by half of the cheese and half of the Fritos. Repeat the layers.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
- Serve hot, with sour cream and salsa on the side.
