Description

A cozy Mexican-inspired casserole layered with beef, beans, cheese, and Fritos, perfect for gatherings and leftovers.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag Fritos
  • 1 cup diced bell pepper
  • 1 cup diced onion
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Stir in the black beans, corn, taco seasoning, diced tomatoes, bell pepper, and onion. Cook for 5-7 minutes until everything is heated through.
  4. Layer the mixture in a greased baking dish: start with half of the beef mixture, followed by half of the cheese and half of the Fritos. Repeat the layers.
  5. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  6. Serve hot, with sour cream and salsa on the side.
