Description
Walking Taco Casserole is a fun, family-friendly dinner packed with ground beef, beans, cheese, and crunchy Fritos. Perfect for weeknights, potlucks, or gatherings.
Ingredients
- 1 pound ground beef
- 1 small onion, chopped finely
- 1 package taco seasoning
- ½ cup water
- 1 can black beans (15 ounces, drained and rinsed)
- 1 can diced tomatoes with green chiles (10 ounces)
- ½ cup sour cream
- 1 bag Fritos corn chips (9.25 ounces)
- 2 cups Mexican-style shredded cheese
- Toppings:
- Green onions, sliced
- Sour cream
- Guacamole
- Salsa
- Jalapenos
Instructions
1. Preheat oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.
2. In a large skillet, brown the ground beef until almost done. Add onions and cook until soft and the meat is no longer pink.
3. Stir in taco seasoning and water, bring to a boil, then reduce heat.
4. Mix in black beans, diced tomatoes with green chiles, and sour cream. Simmer 8–10 minutes until thickened.
5. Place a layer of corn chips in the baking dish, sprinkle 1 cup cheese, spread beef mixture, then top with remaining cheese.
6. Cover with foil, bake 15 minutes, then uncover and bake 5 more minutes until bubbly.
7. Remove from oven, top with extra Fritos and your favorite toppings.
Notes
Use lean ground beef or substitute with ground turkey or chicken.
Swap beans with pinto or kidney beans for variety.
Add toppings like green onions, olives, or extra salsa.
Make ahead: refrigerate unbaked casserole and add 5–10 minutes to cook time.
