Ingredients
- 4 1/2 cups cubed sweet potatoes (about 1 1/2 pounds)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cinnamon
- 1 pound lean ground beef
- 1 Tablespoon tomato paste
- 1 Tablespoon taco seasoning
- 2 cups low-fat cottage cheese
- 1 large avocado (or 2 small)
- 4 Tablespoons hot honey
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper or spray with avocado oil.
2. Add cubed sweet potatoes to the baking sheet, drizzle with avocado oil, and sprinkle with salt, pepper, and cinnamon. Toss to coat evenly.
3. Roast the sweet potatoes for 30 minutes, flipping halfway through, until golden and caramelized on the edges.
4. While the potatoes roast, cook the ground beef in a skillet over medium-high heat. Once browned, stir in tomato paste and taco seasoning, and cook 3–4 minutes until fragrant.
5. Assemble the bowls with roasted sweet potatoes, cooked ground beef, cottage cheese, avocado slices, and a drizzle of hot honey.
