- 1 whole chicken
- 1 onion, halved
- 1 piece of ginger, sliced
- 1 cinnamon stick
- 2 star anise
- 3–4 cloves
- 1 tablespoon coriander seeds
- Salt, to taste
- Pho noodles
- Fresh herbs (basil, cilantro, green onions)
- Lime wedges
Instructions
- Roast the onion and ginger in a dry pot over medium heat until slightly charred.
- In a large pot, add the whole chicken, roasted aromatics, and all the spices. Pour in enough water to cover the chicken entirely.
- Bring the pot to a boil, then reduce the heat to let it simmer gently for about 30-40 minutes until the chicken is fully cooked.
- Carefully remove the chicken from the pot and allow it to cool. Shred the meat and discard the skin and bones.
- Strain the broth to remove the solids and return it to the pot. Season with salt to taste.
- Cook the pho noodles according to the package instructions. Drain and set aside.
- In serving bowls, add pho noodles, followed by shredded chicken. Ladle hot broth over everything.
- Offer fresh herbs and lime wedges on the side for garnish.
Notes
Enhance the broth’s flavor with a splash of fish sauce and add fresh herbs just before serving for optimal freshness.
