Description

A hearty and flavorful vegetable soup, perfect for chilly nights, bursting with fresh produce and vibrant spices.


Ingredients

Scale
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 2 tomatoes, diced
  • 2 cups spinach
  • 4 cups vegetable broth
  • 1 teaspoon curry powder
  • 1 teaspoon dried thyme
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In an Instant Pot or slow cooker, combine the chopped onion, celery, carrots, diced potatoes, tomatoes, and spinach.
  2. Pour in the vegetable broth, adding the curry powder, thyme, lemon juice, salt, and pepper.
  3. For the Instant Pot, set it to ‘Soup’ mode for 15 minutes. For a slow cooker, let it cook on low for 6–8 hours.
  4. Before serving, give it a good stir and adjust the seasoning to taste.
