- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 2 potatoes, diced
- 2 tomatoes, diced
- 2 cups spinach
- 4 cups vegetable broth
- 1 teaspoon curry powder
- 1 teaspoon dried thyme
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In an Instant Pot or slow cooker, combine the chopped onion, celery, carrots, diced potatoes, tomatoes, and spinach.
- Pour in the vegetable broth, adding the curry powder, thyme, lemon juice, salt, and pepper.
- For the Instant Pot, set it to ‘Soup’ mode for 15 minutes. For a slow cooker, let it cook on low for 6–8 hours.
- Before serving, give it a good stir and adjust the seasoning to taste.
