- 1 onion, chopped
- 2 tablespoons fresh ginger, grated
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tablespoons olive oil

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in grated ginger and chopped carrots, cooking for about 3-4 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Mix in coconut milk and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.

For creamier texture, blend the soup longer. Adjust spices and seasonings to taste.
