Description

Ingredients

  • 4 cups carrots, chopped
  • 1 onion, chopped
  • 2 tablespoons fresh ginger, grated
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Stir in grated ginger and chopped carrots, cooking for about 3-4 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Mix in coconut milk and season with salt and pepper.
  6. Serve hot, garnished with fresh herbs if desired.
