Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, eggs, vanilla extract, and melted butter, whisking until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat oil in a deep pan over medium heat until it reaches 350°F (175°C).
- Drop spoonfuls of batter gently into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown.
- Use a slotted spoon to remove the beignets from the oil and drain them on paper towels.
