- 4 chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes
- 2 cups spinach
- 1 cup heavy cream
- 1/3 cup Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear the chicken for about 5-7 minutes until golden brown. Remove and set aside.
- Sauté minced garlic in the same pan for 30 seconds until fragrant. Add sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream, stirring in Parmesan cheese and Italian seasoning. Let simmer until thickened.
- Add fresh spinach and stir until wilted.
- Return the chicken to the pan and cook for an additional 5 minutes until thoroughly cooked.
