Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat. Sear the chicken for about 5-7 minutes until golden brown. Remove and set aside.
  3. Sauté minced garlic in the same pan for 30 seconds until fragrant. Add sun-dried tomatoes and cook for another minute.
  4. Pour in the heavy cream, stirring in Parmesan cheese and Italian seasoning. Let simmer until thickened.
  5. Add fresh spinach and stir until wilted.
  6. Return the chicken to the pan and cook for an additional 5 minutes until thoroughly cooked.
