- 4 Tomatillos (husks removed and cleaned)
- 7 Anaheim Red Chiles (stems, seeds, and membranes removed)
- 2 Chiles de Arbol
- 1 Chipotle Chile (stem, seeds, and membranes removed)
- 3 Garlic Cloves (peeled)
- 1 Lime (juice only)
Instructions
- Peel the husk from the tomatillos and rinse them under cool water, then quarter them.
- Prepare the chiles by removing the stems, seeds, and membranes; rinse them under cool water.
- Remove the peel from the garlic cloves.
- In a medium saucepan, combine tomatillos, chiles, and garlic, cover with cool water, and bring to a boil over medium heat.
- Once boiling, reduce heat to a simmer and cook for 15-20 minutes until tomatillos and garlic are soft; chiles may need an additional 10-15 minutes.
- Transfer the tomatillos, garlic, and chiles to a food processor and blend until smooth.
- Warm the lime in the microwave for 10-15 seconds, juice it, and stir it into the sauce.
- If the sauce is too thick, add cool water gradually until you reach the desired consistency.
- Serve immediately or refrigerate for later use.
Notes
Adjust the heat with the number of Chiles de Arbol used. This sauce can be made ahead and stored for convenience.
