- 2 tablespoons red curry paste
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 cup green beans, trimmed
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Fresh cilantro for garnish

Instructions
- In a slow cooker, combine the chicken, coconut milk, red curry paste, chicken broth, fish sauce, and brown sugar.
- Toss in the sliced bell pepper, trimmed green beans, minced garlic, and grated ginger.
- Mix everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
