- 2 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 8 ounces cremini or baby bella mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup shredded Monterey Jack or Mozzarella cheese (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the chicken breasts dry and season with salt, pepper, garlic powder, onion powder, and paprika.
- In a skillet, heat olive oil over medium heat and sear the chicken breasts for 5-6 minutes on each side until golden brown. Remove from the pan.
- Add unsalted butter to the same skillet and sauté sliced mushrooms until golden brown.
- Stir in minced garlic and cook until fragrant.
- Pour in chicken broth, scraping the bottom of the skillet.
- Incorporate heavy cream into the broth and bring to a simmer.
- Return the chicken to the skillet, spoon sauce over, and simmer until heated through.
- If using, sprinkle cheese on top, cover the skillet, and simmer until melted.
- Garnish with parsley and serve hot.
Notes
This dish pairs well with rice, pasta, or a fresh salad. You can make it ahead and freeze for later use.
