Description

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces cremini or baby bella mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded Monterey Jack or Mozzarella cheese (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken breasts dry and season with salt, pepper, garlic powder, onion powder, and paprika.
  2. In a skillet, heat olive oil over medium heat and sear the chicken breasts for 5-6 minutes on each side until golden brown. Remove from the pan.
  3. Add unsalted butter to the same skillet and sauté sliced mushrooms until golden brown.
  4. Stir in minced garlic and cook until fragrant.
  5. Pour in chicken broth, scraping the bottom of the skillet.
  6. Incorporate heavy cream into the broth and bring to a simmer.
  7. Return the chicken to the skillet, spoon sauce over, and simmer until heated through.
  8. If using, sprinkle cheese on top, cover the skillet, and simmer until melted.
  9. Garnish with parsley and serve hot.

Notes

This dish pairs well with rice, pasta, or a fresh salad. You can make it ahead and freeze for later use.
