Ingredients

  • 34 pounds chuck roast
  • 1 cup BBQ sauce
  • 1 cup tomato sauce
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup beef broth
  • Optional: Fresh herbs for garnish

Instructions

  1. Season the chuck roast generously with salt, pepper, and paprika, ensuring it’s well-coated for maximum flavor.
  2. In the Instant Pot or slow cooker, add the chopped onion and minced garlic.
  3. Place the seasoned roast on top of the onions and garlic.
  4. In a separate bowl, mix together BBQ sauce, tomato sauce, and beef broth. Pour over the roast.
  5. For Instant Pot: Seal the lid and cook on high pressure for 60 minutes. Allow natural release. For slow cooker: Cook on low for 6-8 hours or high for 4-5 hours.
  6. Once cooked, shred the roast using two forks and mix it with the sauce.
  7. Serve hot, garnished with fresh herbs.

Notes

For best results, season the roast the night before. Leftovers can be frozen for up to three months.
