Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. Place the chicken breasts flat on the bottom of your slow cooker.
  2. In a bowl, whisk together the pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper until combined.
  3. Pour the sauce mixture over the chicken breasts, ensuring each piece is well-coated.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fork-tender.
  5. Remove the chicken, whisk cornstarch and water in a bowl to create a slurry, then stir it into the sauce in the slow cooker.
  6. Return the chicken to the slow cooker and let it cook with the sauce for an additional 10-15 minutes to thicken.
  7. Shred the chicken with two forks or keep it whole, serve hot over rice or noodles, garnished with green onions and sesame seeds.

Notes

For richer flavors, marinate the chicken in the sauce overnight before cooking. Feel free to add vegetables for extra nutrition.
