Description

Bold, zesty chicken wraps made with sweet chili sauce, fresh veggies, and a creamy spread, perfect for a quick meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into thin strips or small chunks
  • 1/2 cup Sweet Chili Sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon olive oil or avocado oil
  • 1/3 cup mayonnaise or Greek yogurt
  • 2 tablespoons Sweet Chili Sauce
  • 1 tablespoon fresh lime juice
  • 4 large (10-inch) flour tortillas or spinach wraps
  • 2 cups shredded lettuce
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned or coarsely grated
  • 1/2 English cucumber, cut into thin matchsticks
  • 1/4 cup fresh cilantro leaves, roughly chopped
  • 2 green onions, thinly sliced

Instructions

  1. In a medium bowl, whisk together 1/2 cup sweet chili sauce, soy sauce, lime juice, minced garlic, and grated ginger. Add the chicken and toss to coat evenly. Allow it to marinate for at least 15 minutes.
  2. While the chicken is marinating, combine mayonnaise, 2 tablespoons of sweet chili sauce, and 1 tablespoon of lime juice in a small bowl and whisk until smooth.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Once hot, add the marinated chicken and cook for 5-7 minutes until cooked through.
  4. Pour the reserved marinade into the skillet and bring to a simmer, cooking for 1-2 minutes until the sauce thickens.
  5. Wrap tortillas in damp paper towels and microwave for 20-30 seconds to warm.
  6. Place a warm tortilla flat, spread the creamy chili sauce, and top with lettuce, red cabbage, carrots, cucumber, and sweet chili chicken.
  7. Roll the tortilla tightly, folding in the sides, and slice diagonally for presentation.

Notes

For added flavor, allow the chicken to marinate longer. Adjust the spices to suit your taste. Customize with different proteins or vegetable toppings.
