Ingredients
1 (4 to 5-pound) whole chicken, giblets removed
1 tablespoon extra-virgin olive oil
½ teaspoon Italian seasoning
Kosher salt, to taste
Freshly ground black pepper, to taste
Instructions
1. Preheat the oven to 425°F (220°C) and place a rack in the lower third.
2. Pat the chicken dry with paper towels and bring it to room temperature.
3. Place breast-side up in a cast iron skillet or oven-safe pan. Truss the legs if possible.
4. Rub olive oil over the chicken and season generously with salt, pepper, and Italian seasoning.
5. Roast for 70 to 90 minutes, until the thickest part of the thigh reads 165°F (74°C).
6. Let the chicken rest for 15 minutes before carving and serving.
Notes
If you don’t have twine, roast the chicken without trussing but check doneness 10–15 minutes earlier.
Save the pan drippings to make a quick gravy.
Leftover chicken is great for soups, salads, and wraps.
