Ingredients

- 2 ripe avocados
- Lime juice (to taste)
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika

- 2 cups rotisserie chicken, shredded
- 1/4 cup mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red onion
Instructions
- Cut the avocados in half and gently remove the pits.
- Brush the flesh of the avocados with lime juice to prevent browning.
- In a mixing bowl, combine shredded rotisserie chicken, mayonnaise, diced celery, and diced red onion until well-mixed.
- Season the chicken salad mixture with chili powder, paprika, and salt to taste.
- Spoon the savory chicken salad into each avocado half.
- Serve immediately.
Notes
For variation, substitute the chicken with chickpeas for a vegan version, or add jalapeños for a spicy kick.
