Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper. Stir well to combine.
  3. Bring to a simmer and cook for about 20 minutes.
