- 6 carrots, grated
- 1 small celery root, finely diced
- 25 ml olive oil
- 1 large onion, diced
- 7 garlic cloves, chopped
- 3 tablespoons tomato paste
- 400 g crushed canned tomatoes
- 200 ml broth or water
- 180 g red wine or grape juice
- Salt, pepper, Italian herbs, chili flakes (to taste)
- Parmesan cheese (for serving)
Instructions
- Grate the carrots and finely dice the celery root, onion, and garlic.
- Heat olive oil in a large pot over medium heat, add the vegetables, and sauté until softened.
- Stir in the tomato paste and let it cook for one minute.
- Add the ground beef and cook until browned.
- Pour in the red wine and allow it to reduce.
- Stir in crushed tomatoes and broth, mixing well.
- Season with salt, pepper, and herbs, then simmer for 30-45 minutes.
- Cook spaghetti according to package instructions.
- Serve the spaghetti topped with Bolognese sauce and grated Parmesan.
