Description

A comforting Southwest crock pot chicken and rice dish that combines tender chicken, rice, and rich flavors for a hearty meal.


Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Sprinkle the rice, black beans, corn, salsa, taco seasoning, and chicken broth on top of the chicken.
  3. Season with salt and pepper to taste.
  4. Using a spatula, gently stir the ingredients while keeping the layers intact.
  5. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is thoroughly cooked.
  6. Once ready, shred the chicken with two forks in the pot and mix all ingredients together.
  7. For an indulgent touch, top with shredded cheese just before serving.

Notes
