- 2 chicken breasts
- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 packet taco seasoning
- 1 cup chicken broth
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Sprinkle the rice, black beans, corn, salsa, taco seasoning, and chicken broth on top of the chicken.
- Season with salt and pepper to taste.
- Using a spatula, gently stir the ingredients while keeping the layers intact.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is thoroughly cooked.
- Once ready, shred the chicken with two forks in the pot and mix all ingredients together.
- For an indulgent touch, top with shredded cheese just before serving.
Notes
Consider marinating the chicken in salsa for a few hours before cooking for deeper flavor. Pair with a salad or cornbread.
