Description
A warm and comforting Southern casserole made with tender yellow squash and sharp cheddar, topped with a buttery cracker crust.

- 4 cups yellow squash (sliced)
- 1 small onion (finely chopped)
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 large egg (beaten)
- 1 cup crushed buttery crackers (such as Ritz)
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the sliced squash and chopped onion. Sauté for about 5–7 minutes until tender, then drain any excess liquid.
- Combine the cooked squash and onions with salt, pepper, garlic powder, and paprika in a mixing bowl.
- Stir in the shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Mix well.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Mix the crushed buttery crackers with melted butter and sprinkle over the casserole.
- Bake for 25–30 minutes or until golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
For best results, use fresh ingredients. This casserole is great for potlucks and reheats well.
