Description

A warm and comforting Southern casserole made with tender yellow squash and sharp cheddar, topped with a buttery cracker crust.


Ingredients

  • 4 cups yellow squash (sliced)
  • 1 small onion (finely chopped)
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 large egg (beaten)
  • 1 cup crushed buttery crackers (such as Ritz)
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a large skillet over medium heat.
  3. Add the sliced squash and chopped onion. Sauté for about 5–7 minutes until tender, then drain any excess liquid.
  4. Combine the cooked squash and onions with salt, pepper, garlic powder, and paprika in a mixing bowl.
  5. Stir in the shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Mix well.
  6. Transfer the mixture into a greased 9×13-inch baking dish.
  7. Mix the crushed buttery crackers with melted butter and sprinkle over the casserole.
  8. Bake for 25–30 minutes or until golden brown and bubbly.
  9. Let cool for a few minutes before serving.

Notes

For best results, use fresh ingredients. This casserole is great for potlucks and reheats well.
