- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 chipotle pepper in adobo sauce, finely chopped (or 2 if you like it spicy)
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- 1 cup uncooked long-grain rice
- 2 cups low-sodium chicken broth
- 1/2 cup BBQ sauce (use your favorite brand)
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup black beans, rinsed and drained
- 1 tablespoon lime juice (optional)
- Fresh cilantro or green onions, for garnish
Instructions
- In a large skillet over medium-high heat, warm the olive oil. Add the chicken pieces, season with salt and pepper, and cook for about 5–6 minutes until they’re lightly browned on all sides. Remove the chicken and set aside.
- In the same skillet, add the diced onion and cook for 2–3 minutes until softened. Stir in the minced garlic, chopped chipotle pepper, smoked paprika, cumin, and oregano. Let the spices toast for 1 minute until fragrant.
- Add the uncooked rice to the skillet, stirring to coat it in the spices and oil. Pour in the chicken broth and BBQ sauce, mixing everything well. Scrape up any browned bits from the bottom.
- Return the browned chicken to the skillet along with the corn and black beans. Stir everything together, bring to a gentle simmer, then reduce the heat to low.
- Cover and cook undisturbed for about 18–20 minutes, or until the rice is tender. If too dry, add a splash more broth.
- Once done, fluff the rice gently with a fork. If desired, add a splash of lime juice for brightness, and garnish with fresh cilantro or sliced green onions. Serve hot.
Notes
For perfect rice, avoid lifting the lid while cooking to maintain the steam needed for the ideal texture.
