Burger Sauce:

1/2 cup mayo

1/4 cup ketchup

1 tbsp finely chopped dill pickles

1/2 tsp pickle juice

1/4 tsp paprika

1/2 tsp garlic powder

1/4 tsp kosher salt

1/8 tsp ground black pepper

1/2 tsp soy sauce

1/2 tsp rice vinegar

Smash Burger Tacos:

1 lb ground beef (80/20)

3/4 tsp kosher salt

1/4 tsp ground black pepper

6 slices American cheese

6 flour tortillas (street taco size)

shredded lettuce

burger pickles

optional: bacon, white onions


Instructions

1. Make the Burger Sauce: In a small bowl, combine mayo, ketchup, chopped pickles, pickle juice, paprika, garlic powder, salt, pepper, soy sauce, and rice vinegar. Mix well and set aside.

2. Form Burger Balls: In a medium bowl, season the ground beef with salt and pepper. Mix gently, then divide into six equal-sized balls.

3. Prep Ingredients: Set out tortillas, cheese slices, and toppings like lettuce and pickles near your cooking station. This cooks fast, so have everything ready!

4. Preheat Griddle: Heat your Blackstone or skillet to medium-high. Once hot, add beef balls.

5. Smash the Patties: Use a burger press or spatula to flatten each beef ball as much as possible. Smash for 15–20 seconds. Cook for another 40 seconds.

6. Flip and Cheese It: Flip patties, immediately top with cheese. Place tortillas on the griddle next to patties.

7. Toast and Assemble: After 2 minutes, flip tortillas and lift each cheesy patty onto a tortilla. Transfer to a plate.

8. Build the Tacos: Top with shredded lettuce, pickles, and a generous drizzle of burger sauce. Add bacon or onions if using. Serve hot!
