- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons tikka masala curry powder
- 1 cup vegetable broth
- Salt and pepper to taste
- Rice and pita bread for serving
Instructions
- In a slow cooker, combine the diced sweet potatoes, rinsed red lentils, coconut milk, diced tomatoes, chopped onion, minced garlic, grated ginger, tikka masala curry powder, vegetable broth, and season with salt and pepper.
- Stir to ensure all ingredients are well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours. The sweet potatoes should be tender, and the lentils fully cooked.
- Serve warm over rice and accompanied by soft pita bread for a delightful meal.
Notes
For best results, soak lentils for 30 minutes and sauté onions, garlic, and ginger before slow cooking.
