- 1 yellow bell pepper, sliced

- 2 tablespoons water

Instructions
- Prepare the Slow Cooker: Begin by placing the chicken at the bottom of your slow cooker, arranging them evenly.
- Make the Sauce: In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, garlic, and ginger.
- Add Vegetables: Layer the sliced red and yellow bell peppers and onion on top of the chicken.
- Combine and Cook: Pour the sauce over the chicken and vegetables, then cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Thicken the Sauce: About 30 minutes before serving, mix cornstarch and water in a small bowl. Stir into the cooker to thicken the sauce.
- Serve: Serve the sweet chili chicken over rice and garnish with green onions and sesame seeds.
Notes
