- 1 (3-4 lb) beef chuck roast
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, quartered
- 2 cups beef broth
- 1 packet onion soup mix
- Salt and pepper to taste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, and sear on all sides until browned.
- Place chopped carrots, potatoes, and quartered onion in the bottom of the slow cooker.
- Place the seared roast on top of the vegetables.
- In a bowl, mix beef broth, onion soup mix, and Worcestershire sauce, then pour over the roast and vegetables.
- Secure the lid and cook on low for 8-10 hours or high for 4-5 hours.
- Serve hot with veggies and gravy over mashed potatoes or rice.
Notes
For added flavor, sear the meat well and consider using homemade beef broth. Let the roast rest before slicing for the best results.
