Instructions
- Rinse the lentils under cold water until they run clear.
- In your slow cooker, combine the lentils, diced carrots, diced celery, onion, garlic, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper.
- Stir gently to mix everything together.
- Cover the slow cooker and set it to low heat for 6 to 8 hours until the lentils are tender.
