Description

Comforting chicken dish with vibrant flavors, infused with the zesty taste of lemon and herbs, served over fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups rice
  • 4 cups water
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine lemon juice, lemon zest, olive oil, thyme, oregano, garlic, salt, and pepper.
  2. Place the chicken breasts in the slow cooker and pour the lemon herb mixture over them, coating all sides.
  3. Add the chicken broth and stir gently to coat the chicken thoroughly.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, prepare rice according to package instructions using the indicated water amount.
  6. Once the chicken is cooked through, shred it in the slow cooker and mix it with the juices.
  7. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

Cooking on low for the full time allows the flavors to meld beautifully. Use two forks to shred the chicken in the slow cooker.
