Ingredients

  • 3 lbs Chicken Thighs (boneless, skinless)
  • 1/4 Cup Honey
  • 3 Tablespoons Whole Grain Dijon Mustard
  • 1/4 Cup Water
  • 2 Tablespoons Water (additional)
  • 2 teaspoons Cornstarch
  • 2 Cups Red Cabbage (chopped or shredded)
  • 1/4 Cup Olive Oil
  • 3 Tablespoons Apple Cider Vinegar
  • Pinch of Salt/Pepper
  • 1 teaspoon Whole Grain Dijon Mustard
  • 2 teaspoons Honey
  • 2 teaspoons Sugar

Instructions

  1. Trim excess fat from the chicken thighs and place them in the slow cooker.
  2. In a medium bowl, whisk together 1/4 cup honey, 3 tablespoons Dijon mustard, and 1/4 cup water until smooth.
  3. Pour the honey mustard mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
  5. In a bowl, combine the chopped red cabbage, olive oil, apple cider vinegar, pinch of salt, and pepper. Mix well and set aside.
  6. Once cooked, remove the chicken from the slow cooker. In a small bowl, combine 2 tablespoons water and 2 teaspoons cornstarch, then add it to the remaining sauce in the slow cooker. Stir well and cook on high for an additional 15 minutes.
  7. Slice the chicken and serve over the cabbage slaw, drizzled with the honey mustard sauce.

Notes

For best flavor, cook on low heat and consider adding soy sauce for depth. Adjust sweetness to taste with honey.
