Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (carrots, bell peppers, and zucchini)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and black pepper, to taste
  • 1 cup chicken broth

Instructions

  1. Season the chicken breasts with salt, black pepper, and a drizzle of olive oil. Place them at the bottom of the slow cooker.
  2. In a small pan over medium heat, add the remaining olive oil. Sauté the chopped onion and minced garlic until fragrant and slightly soft, about 3 minutes.
  3. Layer the sautéed onion and garlic over the chicken. Add the mixed vegetables on top.
  4. Sprinkle the dried oregano, rosemary, and thyme over the mixture, then pour in chicken broth.
  5. Cover the slow cooker and set it to low for 6 hours or high for 3 hours.
  6. Once cooked, shred the chicken with two forks in the slow cooker. Stir everything together for a homely presentation.
  7. Serve warm, garnished with fresh herbs if desired.

Notes

Fresh herbs added at the end elevate the dish aesthetically and aromatically. For a vegan option, substitute chicken with chickpeas or mushrooms.
