- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (carrots, bell peppers, and zucchini)
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper, to taste
- 1 cup chicken broth
Instructions
- Season the chicken breasts with salt, black pepper, and a drizzle of olive oil. Place them at the bottom of the slow cooker.
- In a small pan over medium heat, add the remaining olive oil. Sauté the chopped onion and minced garlic until fragrant and slightly soft, about 3 minutes.
- Layer the sautéed onion and garlic over the chicken. Add the mixed vegetables on top.
- Sprinkle the dried oregano, rosemary, and thyme over the mixture, then pour in chicken broth.
- Cover the slow cooker and set it to low for 6 hours or high for 3 hours.
- Once cooked, shred the chicken with two forks in the slow cooker. Stir everything together for a homely presentation.
- Serve warm, garnished with fresh herbs if desired.
Notes
Fresh herbs added at the end elevate the dish aesthetically and aromatically. For a vegan option, substitute chicken with chickpeas or mushrooms.
