- 1 1/2 lbs boneless skinless chicken tenders
- 1 lb baby carrots
- 1 1/2 lbs Yukon gold potatoes (cut into wedges)
- 1/2 cup salted butter (melted)
- 1 Tbsp minced garlic
- Salt and pepper to taste
- 1 tsp dried thyme leaves
- 1 tsp dried parsley
Instructions
- Place the chicken tenders in the center of your slow cooker.
- Arrange the potato wedges on one side of the chicken and scatter the baby carrots on the opposite side.
- In a mixing bowl, combine the melted butter, minced garlic, salt, pepper, dried thyme, and parsley. Stir until well mixed.
- Drizzle the garlic butter mixture evenly over the chicken and veggies.
- Cover and set your slow cooker to HIGH for 4 hours or LOW for 6-8 hours.
- Once finished, serve hot with your favorite sides.
Notes
For a vegan option, swap chicken for cubed tofu or chickpeas and use plant-based butter.
