Description

A comforting one-pot dish featuring slow-cooked chicken, buttery potatoes, and tender carrots, perfect for gatherings.


Ingredients

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes (cut into wedges)
  • 1/2 cup salted butter (melted)
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Place the chicken tenders in the center of your slow cooker.
  2. Arrange the potato wedges on one side of the chicken and scatter the baby carrots on the opposite side.
  3. In a mixing bowl, combine the melted butter, minced garlic, salt, pepper, dried thyme, and parsley. Stir until well mixed.
  4. Drizzle the garlic butter mixture evenly over the chicken and veggies.
  5. Cover and set your slow cooker to HIGH for 4 hours or LOW for 6-8 hours.
  6. Once finished, serve hot with your favorite sides.

Notes

For a vegan option, swap chicken for cubed tofu or chickpeas and use plant-based butter.
