- 1 ½ lbs boneless skinless chicken tenders
- 1 lb baby carrots
- 1 ½ lbs Yukon gold potatoes, cut into wedges
- ½ cup salted butter, melted
- 1 Tbsp minced garlic
- Salt and pepper to taste
- 1 tsp dried thyme leaves
- 1 tsp dried parsley
Instructions
- Place the chicken tenderloins in the center of the slow cooker.
- Arrange the potato wedges on one side and fill the other side with baby carrots.
- In a bowl, whisk together the melted butter, minced garlic, salt, pepper, dried thyme, and parsley.
- Drizzle the garlic butter mixture over the chicken and veggies.
- Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6-8 hours.
- Serve hot with your choice of sides.
