Ingredients

  • 1 ½ lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 ½ lbs Yukon gold potatoes, cut into wedges
  • ½ cup salted butter, melted
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Place the chicken tenderloins in the center of the slow cooker.
  2. Arrange the potato wedges on one side and fill the other side with baby carrots.
  3. In a bowl, whisk together the melted butter, minced garlic, salt, pepper, dried thyme, and parsley.
  4. Drizzle the garlic butter mixture over the chicken and veggies.
  5. Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6-8 hours.
  6. Serve hot with your choice of sides.
