- 1/2 cup milk
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup frozen corn
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups sliced potatoes (about 1.5 lbs)
- 1 cup shredded cheese (cheddar or your preference)
Instructions
- Gather all ingredients to ensure everything is ready for a seamless cooking experience.
- Dice the onion and mince the garlic uniformly.
- Thoroughly rinse and drain the canned beans to remove excess sodium.
- Brown the ground beef over medium heat until no longer pink. Drain any excess fat.
- Layer the sliced potatoes at the bottom of the slow cooker, followed by the browned beef, onion, garlic, kidney beans, corn, and diced tomatoes.
- In a mixing bowl, stir together the cream of mushroom soup, milk, chili powder, salt, and pepper, then pour over the layered ingredients.
- Cover and cook on low for 6 to 8 hours.
- About 30 minutes before serving, sprinkle shredded cheese on top and cover until melted and bubbly.
Notes
For a lighter version, substitute ground beef with turkey or chicken. Use homemade or low-sodium cream of mushroom soup for a healthier option.
