Ingredients

  • 1 large head of broccoli, cut into florets
  • 1 (16 oz) jar of your favorite Alfredo sauce
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Optional: Red pepper flakes for a touch of heat
  • 1 lb pasta of your choice
  • 1 tablespoon olive oil (for searing chicken, optional)
  • 1/2 cup unsalted butter
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of ground nutmeg (optional)

Instructions

  1. If desired, sear the chicken breasts in olive oil over medium-high heat for 2-3 minutes on each side until lightly browned.
  2. Place the chicken breasts in the bottom of the slow cooker in a single layer.
  3. Sprinkle the minced garlic and Italian seasoning over the chicken.
  4. Pour Alfredo sauce over the chicken, ensuring they’re mostly covered.
  5. Add softened cream cheese to the slow cooker.
  6. Season with salt and pepper.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  8. About 30 minutes before serving, add broccoli florets to the slow cooker.
  9. Shred the chicken with two forks in the slow cooker.
  10. Stir in grated Parmesan cheese until melted and creamy.
  11. Cook pasta according to package directions, then combine it with the shredded chicken and broccoli.
  12. Serve warm, garnished with extra Parmesan and red pepper flakes if desired.

Notes

For a richer sauce, consider using half-and-half instead of heavy cream. Experiment with adding vegetables for added nutrition.
