- 1 cup rice (white or brown)
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth (or vegetable broth)

- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onions, carrots, and celery, stirring until softened, about 5 minutes.
- Toss in the diced chicken breasts. Cook until they turn golden brown, stirring occasionally, for about 6-7 minutes.
- Stir the rice into the pot, allowing it to toast just a bit before adding the chicken broth. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer until the rice is tender, about 15 minutes.
- Pour in the cream and season with salt and pepper to taste. If desired, fold in some fresh herbs for extra flavor.
- Serve hot, garnished with additional herbs if you like, and enjoy the warmth of home-cooked goodness!
