Ingredients

  • 1 lb beef flank steak (or skirt steak)
  • 1/2 teaspoon baking soda
  • 1 tablespoon light soy sauce
  • 1 teaspoon peanut oil
  • 2 teaspoons cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil
  • 2 tablespoons peanut oil (or vegetable oil)
  • 1/2 white onion, sliced
  • 3 cloves garlic, sliced
  • 1 thumb ginger, sliced
  • 1 lb asparagus, tough ends removed and cut to bite-size pieces (or bell pepper)

Instructions

  1. Marinate the beef: In a bowl, combine the flank steak with baking soda, light soy sauce, peanut oil, and cornstarch. Let this marinate while prepping the other ingredients.
  2. Prepare the sauce: In a small bowl, whisk together the chicken broth, oyster sauce, light soy sauce, dark soy sauce, sugar, and cornstarch until smooth.
  3. Cook the beef: Heat 1 tablespoon of peanut oil in a skillet over medium-high heat. Add the marinated beef strips and cook for about 1 minute until golden brown. Flip and cook for another minute before removing from skillet.
  4. Cook aromatics: In the same skillet, add the remaining peanut oil, sliced onion, garlic, and ginger. Cook for about 2 minutes until fragrant.
  5. Add vegetables: Add the asparagus (or other choice of vegetable) and cook for another 1 minute.
  6. Add sauce: Stir the sauce mixture from earlier into the skillet and whisk until it thickens.
  7. Combine: Return the beef to the skillet and mix until well combined. Serve hot.
