- 4 cups cooked jasmine rice, chilled
- 1 pound shrimp, peeled and deveined
- 2 large eggs, lightly beaten
- 1 cup carrots, diced small
- 1 cup frozen peas
- 4 stalks green onions, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 3 tablespoons vegetable oil
- 1/2 teaspoon fine salt, or to taste
- 1/4 teaspoon black pepper
Instructions
- Heat a wok or large skillet over high heat until a drop of water sizzles away.
- Gather shrimp, beaten eggs, diced vegetables, and sauces in bowls.
- Add 1 tablespoon of vegetable oil, sear shrimp for 1 to 2 minutes on each side until pink and opaque, then set aside.
- Drizzle another teaspoon of oil, pour in beaten eggs, scramble until set, then remove.
- Add remaining tablespoon of oil, stir-fry garlic, carrots, and peas for 2 to 3 minutes.
- Add chilled rice, breaking up clumps, then stir in shrimp and scrambled eggs.
- Pour soy and oyster sauces over the rice mixture with sesame oil, toss until well coated.
- Add green onions, season with salt and pepper, and give it one last toss.
- Plate the shrimp fried rice while hot and aromatic.
Notes
Keep heat high during cooking to ensure shrimp cooks quickly. Adjust seasonings based on taste preference.
