Description

A fresh and flavorful shrimp and asparagus stir-fry that’s quick to make and packed with nutrients.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the pan, cooking until they turn pink, about 2-3 minutes.
  4. Next, toss in the asparagus and mushrooms. Stir-fry for another 5 minutes until the asparagus is tender-crisp and bright green.
  5. Pour in the soy sauce and oyster sauce, stirring well to coat all ingredients.
  6. Season with salt and pepper to taste.
  7. Serve hot over rice or noodles.

Notes

Don’t overcrowd your pan; cook in batches if necessary. For added flavor, consider garnishing with fresh herbs.
