- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the shrimp to the pan, cooking until they turn pink, about 2-3 minutes.
- Next, toss in the asparagus and mushrooms. Stir-fry for another 5 minutes until the asparagus is tender-crisp and bright green.
- Pour in the soy sauce and oyster sauce, stirring well to coat all ingredients.
- Season with salt and pepper to taste.
- Serve hot over rice or noodles.
Notes
Don’t overcrowd your pan; cook in batches if necessary. For added flavor, consider garnishing with fresh herbs.
